Traditional scottish cookie that is quite addictive.

servings:Makes 20 cookies


  • 1/2 c. unsalted butter
  • 1/2 c. icing sugar
  • 1 1/2 c. flour
  • 1/2 t. baking soda
  • 1/4 t. cream of tartar
  • 1 egg
  • Good quality Raspberry Jam
  • 1/2 c. icing sugar, or more
  • 1/4 t. almond extract
  • 2 t. water
  • Red Glace Cherries

    Cream butter and icing sugar in large mixing bowl.

    Add baking soda & cream of tartar, then gradually mix in flour.

    Chill dough for 1/2 hour.

    Roll out and cut into 1 1/2 inch rounds

    Bake at 300 for 12 - 15 minutes, making sure that cookies are very lightly baked and appear white & crisp.

    To assemble:

    Put 1/2 t. jam on one round, top with 2nd round. Put 1 t (or less) of icing on top of cookie, place 1/2 of a red cherry on top. Chill in fridge and store in air-tight container.
