We’ve all heard of potato chips...why not brussels sprout chips? (And, yes it is a plural ’s’)

  • 8 ounces brussels sprouts, leaves separated, cores discarded
  • 1-2 tbls oil
  • 1 teaspoon chopped fresh thyme
  • Pinch of freshly grated nutmeg, salt, pepper
  • vinegar to taste
