Filipino Duck Adobo

This is actually one of Dad’s favorite ways to fix duck. The strong spices help cover the gaminess that wild duck sometimes has.

ingredients

  • 2 puddle ducks
  • 6 garlic cloves, chopped
  • 2 tablespoons vegetable oil
  • 2 cups water
  • 3/4 cup white vinegar
  • 1/2 cup soy sauce
  • 15 whole peppercorns
  • 3 bay leaves

directions

Saute duck and garlic in hot oil in a skillet until duck is browned. Add 2 cups water and remaining ingredients, and simmer, uncovered, for 30 minutes. Remove duck and set aside. Skim oil off the sauce and simmer, uncovered,until reduced by half. Remove bay leaves, and discard. Serve duck over rice, and top with sauce.

Andrew or Nathan will probably get the most mileage out of this recipe. Enjoy, boys. I imagine it would work just as well with chicken, too.
