Yummy Chicken Casserole
This is something I have been making for a while. My husband loves this recipe. This is an easy kid pleaser too.
ingredients
- 4 Boneless and Skinless Chicken Breasts
- 1/4 TSP Pepper
- 1/2 Cup Red Pepper (chopped)
- 1/4 Cup Onion (finely chopped)
- 2 Garlic Cloves (minced)
- 3 TBSP Olive Oil
- 1 Bunch Fresh Broccoli cut up(about 10 oz.)
- 1 – 10 oz. can Low Fat Cream of Chicken Soup (or Cream of Mushroom)
- 1/2 Cup Mayonnaise (low fat)
- 1 TSP Curry Powder
- 1 TSP Lemon Juice
- 1 Cup Grated Sharp Cheddar Cheese

Cut Chicken into 2” x 4” Pieces and sprinkle with pepper. Add red pepper, onion, and garlic. Sauté slowly in oil over medium heat until chicken is white and opaque and onions and peppers are partially cooked, about 6 minutes.

Steam Broccoli until tender crisp, drain and arrange in bottom of buttered 7” diameter casserole dish. Place Chicken mixture on top of the broccoli.

Mix soup, Mayonnaise, Curry, and Lemon Juice together and heat through in a small saucepan(not to boiling). Pour over Chicken and Veggies. Sprinkle top with Cheddar Cheese and bake uncovered at 375˚F (190˚C) for 30 to 35 minutes.

Serve over rice.

I keep pre-chopped peppers and onions in the freezer. This makes dinner after work a lot easier.
