Grilled Corn & Pancetta Salad
ingredients
- 10 slices of pancetta or prosciutto
- 4 ears of corn
- 1 red onion
- 3 tbsp olive oil
- 1 1/2 tbsp balsamic vinegar
- 1 tsp sugar
- salt and pepper
- 15-20 sprigs of cilantro

Place pancetta on a baking sheet and bake in oven at 350 until crispy.

Meanwhile, dice red onion and saute it with olive oil, balsamic vinegar, sugar, and salt on medium- med/low for about 30 minutes, until caramelized.

Wash and chop cilantro.

Grill corn in husks for about 10 minutes. Then remove husk and grill another 5 minutes. Remove kernels from cob.

Mix the corn, crumbled pancetta, caramelized onion, and cilantro. Add salt and pepper to taste.
notes
For easier version, boil or steam corn on the cob, instead of grilling.
