Zucchini al Forno
ingredients
- 6 zucchini -- washed ans sliced lengthwisw 1/4" thick
- 8 plumb tomatoes, ripe -- sliced thin
- 1 clove garlic -- finely chopped
- 1 tablespoon fresh italian parsley -- chopped
- 1 tablespoon fresh basil -- chopped
- 1 cup bread crumbs
- 1/2 cup Parmesan cheese -- grated
- 3 tablespoons lemon juice -- fresh
- 1/4 cup extra virgin olive oil
- 1 pinch oregano
- salt and pepper tp taste
directions
In a bowl, combine all ingredients and mix well. Oil bottom of oven safe 9 x 13 pan. Arrange a layer of sliced zucchini, sprinkle some stuffing all over the layer. Arrange a layer ot tomatoes on top of the stuffing, sprinkle with salt and pepper a d dribble with olive oil. Repeat the process until all the ungredients are used. Bake at 350 deg until zucchini is tender and the stuffing on top is golden.
