ingredients
- 10 slices of bacon
- 1/2 cup Green peppers, chopped
- 8 green onions, chopped
- 1 lb of fresh mushrooms, sliced
- 3 tbsp sherry
- 12 eggs
- 1 1/2 cups milk
- 1 tsp seasoned salt
- 1 tsp dry mustard
- 1 tsp thyme
- 4 cups grated cheese

Fry bacon until crisp, drain and chop

in the same pan, saute green pepper, onions, and mushrooms until limp

add sherry, heating until sherry evaporates.

In a bowl, beat eggs, milk, salt, mustard, and thyme.

Add bacon, mushroom mixture, and 3 cups of grated cheese.

Pour Mixture into a 9 x 13 greased pan

Cover adn refridgerate overnight

Next Morning: Bake uncovered @ 350 for 40 minutes.

Sprinkle remaining cup of cheese and bake for 5 minutes or until cheese melts and an inserted knife comes out clean.

Let stand for 15 minutes before serving.
