Stuffed Peppers
Great for deals on peppers at public market
ingredients
- 4 peppers
- 1/2 lb ground beef or sausage
- 3 T minced onions
- 1 c hot, cooked rice
- 2 well beaten eggs
- 1/2 t of salt
- 1/8 t paprika
- 1/4 t Worcestershire sauce
directions

Prepare peppers: Saute in pan or steam in microwave.

Saute beef/sausage and onions.

Add rice, eggs, salt, paprika, Worcestershire sauce.

Fill pepper cases. Bake at 350° for 10-15 minutes

Top with cut up tomatoes.

Can add tomatoes to beef and onions. For vegetarian version, we have used sauted eggplant. Have tried with roasted peppers but peppers don't stand as easily.
