ingredients

  • 1 lb cavatappi pasta
  • 6 oz leeks, diced into 1/2 inch pieces (opt)
  • 4 oz butter
  • 8 oz block smoked cheddar cheese
  • 8 oz block smoked gruyere cheese
  • 3 tbs flour
  • 1 tbs corn or vegetable oil
  • 1 tsp chipotle chili powder
  • 2 1/2 c half & half
  • 3/4 c panko bread crumbs
  • 2 tsp kosher salt
  • 1 tsp white or pepper
  • 5-6 pieces smoked REAL bacon

    Preheat oven to 350°

    Cook pasta in salted boiling water 8-9 minutes. Drain pasta, cool down under cold running water and reserve. Pasta should be slightly firm. Toss pasta in corn oil and reserve.

    Cook the bacon in a separate pan.

    Melt butter in a large sauce pot and set on medium-high heat. Add leeks and saute for 4-5 minutes. Add flour and cook for 1-2 minutes. Do not brown. Add half & half, salt and pepper and bring to a simmer and cook until thick, about 5-6 minutes. Blend in grated cheeses.

    Add to cooked pasta in 9x12 baking dish. Mix well to combine

    In a saute pan set on medium-high heat, add oil and chipotle chili pwd. Heat for 30 seconds until it starts to smoke. Remove from the stove and quickly stir the the bread crumbs. Sprinkle the crumbs over the pasta and bake in a 350 degree oven for 15-20 minutes until slightly golden brown and crisp.
