White Bean Chili

Really good even if you don’t usually like chili.

ingredients

  • 1 47.4 can of Great Northern white beans-undrained.
  • 6 chicken breasts
  • 1 tbsp olive oil
  • 2 onions, chopped
  • 4 garlic cloves,minced
  • 1 8oz can chopped green chilies
  • 2 tsp ground cumin
  • 1 1/2tsp dried oregano
  • 1/4 tsp cayenne pepper
  • 6 cups of chicken stock
  • 3 cups shredded Monterey Jack cheese
  • sour cream
  • salsa

directions

Cook chicken in chicken stock until tender about 15 minutes. Remove chicken and shred or cut into cubes. Saute onions until translucent, stir in garlic,chilies,and spices. Saute 2 minutes. Add beans,chicken,and onion mixture to chicken stock. Bring to a boil, reduce heat and simmer. When soup is hot add 1 cup of cheese and stir until melted. Season to taste with salt and pepper. Ladle into bowls and serve with shredded cheese, sour cream, and salsa if desired.
