Microwave Toffee

Chocolate and Toffee candy

ingredients

  • 3/4 cup chopped pecans
  • 1 cup sugar
  • 1/4 cup water
  • 1 teaspoon salt
  • 1/2 cup butter, plus 1 tablespoon to butter pan
  • 1 (6-oz.) bag semi-sweet chocolate chips

directions

  • 1

    Lightly butter a baking sheet and sprinkle 1/2 cup of the chopped pecans in a 9 inch circle on the pan.

    Put butter, salt, sugar and water in a 2 quart microwave safe baking bowl. DO NOT STIR.

    Put in microwave on high for 7 to 10 minutes Continue cooking a minute at a time until the mixture just begins to turn tan. DO NOT STIR!

    Remove from microwave when light tan in color and poor mixture over the top of the pecans on the buttered baking sheet. Immediately sprinkle the chocolate chips on top of the hot mixture. In a minute or 2 use a spatula to spread chocolate chips out over the toffee.

    Sprinkle the remaining pecans on top of the chocolate. Put in the refrigerator until the toffee is cooled and chocolate is hard.

    Break into bite sized pieces. May store in plastic bag for several weeks or freeze for up to a month.
