Atlanta Upside Down Cake
ingredients
- 1/4 cup butter
- 1/3 cup butter
- 1/2 cup brown sugar
- 1 can (8 3/4 ounces) sliced peaches, drained
- 1/2 cup pecans, chopped
- 1 cup flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/2 cup white sugar
- 1 egg
- 1/2 teaspoon vanilla extract

Combine 1/4 cup butter and brown sugar.

Mix until well blended.

Spread onto bottom of 8 inch square pan.

Arrange peaches on top of brown sugar mixture.

Sprinkle the top with pecans.

Beat 1/3 cup butter and white sugar until light and fluffy.

Blend in egg and vanilla extract.

A little at a time add flour, baking powder and salt alternating with milk.

Mix well after each addition.

Carefully pour over peaches.

Bake at 350 for 45 minutes.

Immediately invert onto serving plate.
