Breakfast Casserole
ingredients
- 1 pound browned sausage
- 1/3 c. butter
- 1 26-32 oz. pkg frozen shredded hash browns
- 1/2 tsp. salt
- 1 dozen eggs
- 1 cup milk
- 1 can cheddar cheese soup
- 2 cups grated cheddar cheese
- 1/4 tsp. black pepper

Melt butter in 9x13 pan. Put hashbrowns in pan (save 1 cup). In separate bowl, beat eggs, add milk to eggs, mix, then add soup, cheese, salt, pepper and meat.

Pour egg mixture over hash browns. Sprinkle the reserved cup of hash browns over the top. Bake 1 hour at 375 degrees. Remove from oven and let stand 15 minutes before serving.

Can substitute ham or bacon for sausage, or add onion, green pepper, and mushrooms.
