Baked Apple Cheesecake Cupcakes
ingredients
- Filling:
- 2 golden delicious apples, peeled, cored, chopped small
- 1/4 c. sugar
- 1/8 c. water
- 1 tsp. cinnamon
- 1 tsp. cornstarch
- Dough:
- 1 stick butter or butter flavored shortening
- 1 c. sugar
- 1 tsp. vanilla
- 2 eggs
- 1/3 c. milk
- 1 pkg. cheesecake flavored instant pudding
- 2 1/4 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1/4 tsp cinnamon
- Glaze
- 1/2 c. cream cheese, softened
- 1/4 c. milk
- 1/4 c. powdered sugar

In a saucepan, combine apples, sugar, water and cinnamon. Cook over medium heat until apples begin to soften and water starts to evaporate. Whisk in cornstarch until combined, cook for another minute and remove from heat. Allow to cool while preparing the dough.

For dough, cream together butter, sugar and vanilla. Add eggs, milk and pudding mix. Stir dry ingredients into dough.

Grease muffin tin with cooking spray. Fill the bottom of the muffin cups, using 1/2 the batter. Spoon 1 tsp. of the apple mixture into the center of each. Cover each with the remaining batter.

Bake at 350 for about 15 - 18 minutes or until golden brown and the middle springs up when touched.

Whip glaze ingredients together. Drizzle over warm muffins.
