Spinach Sausage Brunch Casserole

ingredients
- 1 pound bulk sweet Italian sausage (Jimmy Dean
- regular)
- 1 cup chopped onions
- 1 pkg (10 oz.) frozen chopped spinach
- 1 red pepper, chopped
- 1 cup shredded Mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 cup flour
- 1/2 cup freshly grated Parmesan cheese
- 1/2 tsp salt
- 8 eggs
- 2 cups milk

Brown sausage and onions in skillet. Remove and drain grease. Thaw and drain spinach. Arrange cooked sausage in a greased 9x13-inch ovenproof baking dish. Sprinkle 1/2 of the red peppers over sausage. Top with spinach. Sprinkle spinach layer with mozzarella and cheddar cheese and the remaining red peppers.

Combine flour, Parmesan cheese, and salt in a mixing bowl. Combine eggs and milk in a separate mixing bowl, beating until smooth. Combine eggs with flour mixture until well blended. Pour filling over casserole.

Bake in a preheated 425 degree oven for 30-40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Cut into squares.
