Wild Rice Salad
Wonderful side salad
ingredients
- 2 cups wild rice (cooked in chicken broth)
- 1/2 cup of diced red onion
- 1/2 cup dried cranberries
- 1/2 cup of dried, diced apricots
- 1/2 pine nuts
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 2 Tablespoons Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Cook the rice according to directions. Drain well.

In a separate bowl, stir the vinegar, oil, mustard, salt and pepper together.

Pour the mixed liquid over the rice and mix the remaining ingredients.

Let cool and chill overnight.

You may wish to add a little salt and pepper before serving.
notes
Great with left- over turkey.
