Sugar Cookies & Icing
ingredients
Sugar Cookies- 4 sticks butter (salted)
- 8 ounces of cream cheese
- 2 cups sugar
- 2 egg yolk
- 2 teaspoon vanilla
- 2 teaspoon salt (only if using unsalted butter)
- 5 cups sifted flour
- 3 cups powdered sugar sifted (imp. to rid of lumps)
- 3 Tablespoon light corn syrup
- 3 Tablespoon water
- splash of vanilla (til desired taste level)

Preheat oven 350

Cream first 3 ingredients together. Then add and cream the next 3 ingredients together. Sift in the flour til the dough is stiff.

Chill for 1 hour. Roll in flour. Cut and bake anywhere between 8-12 minutes depending on the size of your cookies.
Icing

Place in top of double boiler over very low heat (not boiling). Stir until sugar dissolves and smooth.

Tint with food coloring and spoon over cookie on cooking racks. Place parchment paper under rack to make clean up easy.

Scrape drippings and re-melt. If water in double-boiler boils, the icing will not be shiny. Can almost make this icing using hot water + no double boiler.
