Almost Vegan Banana Muffins
These muffins are easy to make, and very good for breakfast on the run or as a treat with a cup of tea.
ingredients
- 3 Very Ripe Bananas
- 1/4 Cup Oil or Vegan Margerine
- 1 Cup Sugar
- 2 Cups Whole Wheat Flour
- 1 Tsp Salt
- 1 Tsp Baking Soda
- 2 Tbsp Water
- 1 Tsp Pure Vanilla Extract
- 1 Cup Chopped Walnuts (optional)
- or
- 1/2 cup walnuts and 1/2 cup of mini chocolate chips (carob chips for vegans)

In a large bowl, mash bananas until soft. Add oil or vegan margarine, vanilla, water and sugar and cream together.

In a separate bowl, combine together flour, salt, and baking soda. Combine with the banana mixture, stirring gently to combine.

Grease or Line muffin pan, and fill each muffin about 2/3 full with batter. Bake for about 25-30 minutes at 375 degrees or until tooth pick inserted into muffin comes out clean.
