Lazy Dazy Oatmeal Cake
ingredients
- Cake:
- 1 1/2 C. hot water
- 1 C. oatmeal (quick)
- 1 C. brown sugar
- 1 C. sugar
- 1 1/1C. butter, softened (or butter flavored Crisco)
- 2 eggs
- 1 1/1C. flour
- 1 tsp. cinnamon
- 1 tsp soda
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. vanilla
- Icing:
- 1/2 square butter
- 3/4 C. brown sugar
- 1/2 C. canned milk
- 3/4 C. chopped nuts(walnuts or pecans)
- 1 tsp. vanilla
- 3/4 C. coconut

Soak hot water and oatmeal together for 20 minutes.

Heat oven to 350°.

Cream together, brown sugar, sugar and butter. Add eggs. flour, cinnamon, soda, baking powder, salt and vanilla. Add oats last. Bake 25 minutes in a 9x13 pan. Glass dishes bake faster, do not over bake.

In a saucepan combine, dissolve and cook, butter, brown sugar and canned milk. Add nuts, vanilla and coconut. Spread on hot cake.
