Lazy Dazy Oatmeal Cake

ingredients

  • Cake:
  • 1 1/2 C. hot water
  • 1 C. oatmeal (quick)
  • 1 C. brown sugar
  • 1 C. sugar
  • 1 1/1C. butter, softened (or butter flavored Crisco)
  • 2 eggs
  • 1 1/1C. flour
  • 1 tsp. cinnamon
  • 1 tsp soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. vanilla
  • Icing:
  • 1/2 square butter
  • 3/4 C. brown sugar
  • 1/2 C. canned milk
  • 3/4 C. chopped nuts(walnuts or pecans)
  • 1 tsp. vanilla
  • 3/4 C. coconut

    Soak hot water and oatmeal together for 20 minutes.

    Heat oven to 350°.

    Cream together, brown sugar, sugar and butter. Add eggs. flour, cinnamon, soda, baking powder, salt and vanilla. Add oats last. Bake 25 minutes in a 9x13 pan. Glass dishes bake faster, do not over bake.

    In a saucepan combine, dissolve and cook, butter, brown sugar and canned milk. Add nuts, vanilla and coconut. Spread on hot cake.
