Veracruz Bean Salad
ingredients
- 2 cans pinto beans, drained and rinsed
- 1 8 oz bottle Catalina French dressing
- 1 medium onion, chopped
- 1 small green pepper chopped
- 1/2 lb. sharp cheddar cheese, grated
- 1 tomato
- 1 cup Fritos, crushed
directions
Mix the first five ingredients together and chill. Before serving, chop the tomato and mix in along with 1/2 cup of crushed Fritos. Top with the other 1/2 cup crushed Fritos.
