Heaven Salad
This is probably the strangest salad I’ve ever eaten, but probably one of the tastier ones! The variety of ingredients is a little crazy, but the taste is, well, Heavenly! This recipe comes from Norma Jean MacPhee’s family. (A great friend who I met through Camp Goodtime)
ingredients
- 1 Cup Lentils
- 2 Cups Water
- 1 Cup Dry Bulgar Wheat
- 1 C Boiling Water
- 14 Cup Olive Oil
- 1/4 Cup Lemon Juice
- 2 Medium Cloves Garlic, crushed (more if you like)
- 1 Tsp Salt
- 1/2 Tsp Oregano
- 2 TBSP fresh, minced dill
- Pepper to taste
- 1/4 Cup packed minced Parsley
- 1/3 Cup minced Red Onion
- 1 Small Bell Pepper, diced (color is your choice)
- 1/2 Stalk, Celery, minced
- 1/2 Cup Feta, crumbled
- 1 Medium Tomato, diced

Place Lentils in medium saucepan, cover with water and bring just to a boil. Turn heat way down, partially cover and allow to simmer without agitation for 20- 25 minutes or until tender, but not mushy. Drain well, and transfer to large bowl.

While lentils are cooking, place bulgar in a small bowl, add boiling water and cover with plate/ lid. Let stand 10- 15 minutes. Bulgar will have absorbed the liquid. Let cool.

Add all remaining ingredients to the lentils, stirring well, but gently. Add tomatoes just at end before serving.

Cover tightly and refrigerate for atleast an hour before serving, preferably 2-3.
