Broccoli or Cauliflower Cheese Soup
ingredients
- 2 T minced onion
- 2 T butter or margarine
- 3 t flour
- 1/2 t salt
- Dash of pepper
- Milk to desired consistency
- 1 1/2 c water
- 4 oz. Velveeta cheese
- 1 10 oz. package frozen broccoli/cauliflower
- 2 chicken bouillon cubes
- 1 small can mushrooms, optional

Saute onions in butter. Stir in flour, salt, and pepper.

Add milk until mixture becomes thick.

Add cheese.

Cook until melted.

Remove from heat.

While cooling, add 2 bouillon cubes to water and cook the vegetables in this.

Add the cooked vegetables to the cheese/milk mixture.

Stir in mushrooms if desired.

Heat through and serve.
