  • 3 whole chicken breasts
  • 3 tablespoons olive oil
  • 2 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 1 quart chicken stock
  • 2 chicken bouillon cubes
  • 1/2 lb unsalted butter
  • 2 1/2 cup chopped yellow onion
  • 1 cup all-purpose flour
  • 1/4 cup heavy cream
  • 18 oz canned artichoke hearts (1 1/2 cans), drained
  • 1 1/2 cups frozen peas
  • 1 1/2 cups frozen small whole onions (onion pearls)
  • 1 1/2 cup minced fresh flat leaf parsley
  • 1/2 cup grated parmesan cheese
  • 1 package of pie crust sheets (Pillsbury)
