Chicken Pot Pies

- 3 whole chicken breasts
- 3 tablespoons olive oil
- 2 1/2 teaspoons salt
- 1 teaspoon pepper
- 1 quart chicken stock
- 2 chicken bouillon cubes
- 1/2 lb unsalted butter
- 2 1/2 cup chopped yellow onion
- 1 cup all-purpose flour
- 1/4 cup heavy cream
- 18 oz canned artichoke hearts (1 1/2 cans), drained
- 1 1/2 cups frozen peas
- 1 1/2 cups frozen small whole onions (onion pearls)
- 1 1/2 cup minced fresh flat leaf parsley
- 1/2 cup grated parmesan cheese
- 1 package of pie crust sheets (Pillsbury)
