Topping Off Salmon
Use these ideas or be creative and make your own!
ingredients
FRESH TOMATO RELISH- Makes about 1 1/2 cups. 3/4 pound ripe tomatoes , cored, seeded, and cut into 1/4-inch dice (Take the work out and use roasted and diced can tomatoes)
- 1 small garlic clove , minced or pressed through a garlic press (about 1/2 teaspoon)
- 1 tablespoon extra virgin olive oil
- 1 teaspoon red wine vinegar
- 2 tablespoons chopped fresh basil leaves
- 1 medium cucumber , peeled, seeded, and diced (2 cups)
- 1/2 small shallot , minced (about 1 tablespoon) Optional
- 1 Serrano chili , seeds and ribs removed, minced (1 tablespoon)
- 2 tablespoons chopped fresh mint leaves
- 1 - 2 tablespoons lime juice
- Table salt
- 4 tangerines , rind and pith removed and segments cut into 1/2-inch pieces (about 1 cup)
- 1 scallion , sliced thin (about 1/4 cup) Optional
- 1 1/2 teaspoons grated ginger
- 2 teaspoons juice from 1 lemon
- 2 teaspoons extra virgin olive oil
