Banana Bread (Tofu)
The tofu makes the bread extra moist and high in protein!
ingredients
- 12 oz silken tofu
- 2 c flour
- 1/2 t baking soda
- 1/2 t baking powder
- 1/4 t salt
- 1 c sugar
- 1/4 vegetable oil
- 1 t vanilla
- 1 c ripe bananas
- 3/4 c walnuts

Combine flour baking soda, baking powder and salt.

In a separate bowl beat sugar, oil, vanilla and mashed bananas.

Blend tofu in the blender. (I’ve used firm tofu and it works, too. I just add a little soy milk.)

Beat everything in one bowl, then fold in the walnuts.

Bake at 350’ for one hour.
