Chiffon Cake

ingredients
- 2 cups sifted flour
- 1 1/2 cup sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup oil
- 7 egg yolks
- 7 egg whites
- 3/4 cup water
- 1 tsp. vanilla
- 1/2 tsp. cream of tartar

Sift together flour, sugar, baking powder & salt. Add oil, 7 egg yolks, water and vanilla.

In another large bowl, beat 7 egg whites and cream of tartar. Beat until stiff (not dry).

Fold in flour mixture, about 1/4th at a time.

Bake in angel food pan or large ungreased loaf pan at 325° for 50 minutes; raise to 350° and bake until light brown and top springs back.
