Cranberry-Apple Crisp
Right out of the oven the cranberries might seem a little tart, but after a few hours (or overnight) the tartness really mellows and gets sweeter.
ingredients
- 3 Granny Smith apples, cored and cut into 1-inch pieces (no need to peel)
- 2 cups whole fresh cranberries, or less, to taste
- 3/4 cup white sugar
- 1 1/2 cup old-fashioned oats (not quick cook)
- 1/2 cup packed brown sugar
- 1/3 cup flour
- 1/2 cup (1 stick) vegan butter, melted

Heat oven to 350°F, and spray a large (2 quart) baking dish liberally with cooking spray.

In a large bowl, mix the apples, cranberries, and white sugar. Spoon into the prepared baking dish.

You can use the same bowl to now mix the oats, brown sugar, and flour. Stir in the melted butter.

Sprinkle the oatmeal mixture evenly over the top of the cranberries and apples. Bake for about 45 minutes until bubbly and the apples are tender.
