From Gus Rosenlof - a Scandinavian Spice Cake

  • 1 stick butter
  • 1 C sugar
  • 2 C flour
  • 2 t cinnamon
  • 2 t ground cloves
  • 2 t ginger
  • 1 t mace
  • 1 t baking soda
  • 1 1/4 C water
  • 2 eggs
  • 1 1/4 C raisins

    Preheat oven to 350 deg.

    1. Cream Butter and sugar.

    2. In medium bowl mix flour, baking soda and spices. Reserve 1 T and mix with raisins in a separate bowl.

    3. In a small bowl mix eggs and water.

    4. Add wet and dry ingredients to the butter in two alternating parts (half wet, half dry and repeat).

    5. fold in the raisins.

    6. transfer to a greased loaf pan.

    7. Bake about 1 hr - until toothpick comes out clean.

I changed this a little: reduced the clove amounts and made using "creaming method".
