Seared Medallions of Beef Tenderloin
ingredients
- 12 2oz beef tenderloin medallions
- 2 Tbs Southwestern spice Mixture (recipe follows)
- 1 Tbs olive oil
- 2 Tbs chili powder
- 2 Tbs paprika
- 1 Tbs ground coriander
- 1 Tbs garlic powder
- 1 Tbs salt
- 2 tsp ground cumin
- 1 tsp cayenne pepper
- 1 tsp red pepper flakes
- 1 tsp fresh ground black pepper
- 1 tsp dried oregano
- Mix together and store in an airtight container.

Season the beef with the Southwestern Spice Mixture and set aside for at least 20 minutes.

Heat the oil in a large skillet over medium high heat, add the beef and turn once after 2 minutes. Cook for an additional 2 minutes for medium rare, or until desired doneness is reached.
