Smoked Salmon Salad

ingredients

  • 8 cups (2 L) torn leaf lettuce
  • 2 green onions, sliced
  • 2 tbsp (25 mL) drained capers
  • Dressing:
  • 2 tbsp (25 mL) vegetable oil
  • 1 tsp (5 mL) grated lemon rind
  • 1 tbsp (15 mL) lemon juice
  • 1 tbsp (15 mL) each liquid honey, dijon mustard and white_wine_vinegar
  • 1/4 tsp (1 mL) each salt and pepper
  • 3 oz (90 g) thinly sliced smoked salmon

    Dressing: In bowl, whisk together oil, lemon rind and juice, honey, mustard, vinegar, salt and pepper. Mince half of the smoked salmon; add to dressing.

    In salad bowl, toss together lettuce, onions and dressing until coated. Divide among plates.

  • 3

    Cut remaining salmon into strips; curl into rosettes and arrange on salad. Sprinkle capers over top.
