OATMEAL CAKE
ingredients
Cake- 1 1/2 c. boiling water
- 1 t. vanilla
- 1 c. oats
- 1 t. cinnamon
- 1 stick butter
- 1 1/3 c. flour
- 1 c. brown sugar
- 1 t. salt
- 1 c. white sugar
- 1 t. baking soda
- 2 well-beaten eggs
- 1/3 t. nutmeg
- 1 c. brown sugar
- 1/2 c. cream
- 1 c. coconut
- 4 T. melted butter
- 1 c. chopped nuts (pecans or walnuts)
- 1 stick butter
- 3/4 c. brown sugar
- 1/4 c. evaporated milk
- 1 t. vanilla
- 1 c. coconut
- 2/3 c. nuts.
directions
Cake
Pour boiling water over oats, let stand 20 minutes. Cream butter, brown sugar and white sugar. Mix with oats. Add eggs, vanilla, cinnamon, flour, salt, soda. Bake in a greased 15x9x3 pan, at 350, 30-35 minutes.
Topping
Mix and spread on cake while it is still hot. Broil until browned.
