Sweet Asian Chicken
ingredients
- 3 lb. boneless, skinless chicken breasts
- 1/2 cup packed brown sugar
- 1/2 cup soy sauce
- 1/8 cup lime juice
- 1/4 teaspoon curry powder
- 1 1/2 tablespoons minced garlic
- 1 1/8 teaspoons crushed red pepper flakes
- sliced carrots
- sliced onions
- peanut oil
- jasmine rice

Rinse and trim chicken as desired. Cut chicken into strips.

Combine the brown sugar, soy sauce, lime juice, curry powder, garlic, and crushed red pepper in a medium bowl. Pour marinade over chicken. Refrigerate and marinade for at least 4 hours.

Using a hot skillet or wok, stir-fry chicken, carrots, and onions in peanut oil over medium heat for about 25 minutes, or until pieces pull apart easily and are no longer pink in the center.

Serve over jasmine rice.
