Roast Chicken
ingredients
- 1 whole chicken or 2 cornish hens
- 2-3 potatoes
- 2 small yellow onions
- 3-4 carrots
- 2-3 stalks celery
- fresh mushrooms
- 1 tbsp soy sauce
- 1 tsp minced garlic
- fresh thyme, rosemary, salt, pepper
- 1 TBSP cold butter
- 1/4 C white wine
- Olive Oil

Roughly chop celery, carrots, potatoes, mushrooms, put in deep baking dish.

Place chicken on top of vegetables. Blend soy sauce, butter, thyme, rosemary, salt and peper together - rub onto chicken skin.

Pour white wine and olive oil over chicken/vegetables.

Bake at 375 until chicken reaches a temperature of 165.
