Fried Eggplant Sticks

ingredients

  • 1 medium eggplant, peeled and cut in 1 inch strips
  • 2 cups ice water
  • 2T salt
  • 1 cup fine dry bread crumbs
  • 1 t salt
  • 1/2 t pepper
  • 1/2 tsp paprika
  • 1/2 cup flour
  • 2 eggs, beaten
  • 2 T milk

directions

Add 2 Tbsp salt to 2 cups water and soak eggplant for 30 mins. Drain eggplant well. Combine bread crumbs, 1 tsp of salt, pepper and paprika. Combine eggs and milk. Strain. Season eggplant and salt and pepper. Dredge in flour, Dip in egg mixture. Roll in seasoned bread crumbs. Fry in deep fat at 375 degrees until golden. Drain on absorbent paper.
