Grilled Salmon
There is nothing better than grilled fish. The more wild caught the better. It does not get more simple than this. Try an unoaked Chardonnay with this.
ingredients
- 4 large Salmon fillets
- 2 tbsp olive oil
- The Rub:
- 2 tsp grated orange zest
- 2 tsp grated lemon zest
- 1/2 tsp groud cumin
- 1/2 tsp ground coriander
- 1/2 tsp brown sugar
- 1/2 tsp granulated garlic
- 1/2 tsp salt
- 1 tsp pepper

Combine rub ingredients and set aside.

Rinse salmon and pat dry, then brush on olive oil, and liberally apply rub to both sides of salmon. Heat grill or grill pan to med-high heat and grill until flesh is firm and slighty flaking (about 4 min per side)
