Aunt Caroline's Carrot Loaf
Oh my You can only imagine my surprise when I came across this recipe from uncle Tom’s wife Aunt Caroline...
ingredients
- 1 1/2 cup flour
- 1 tsp each...baking powder, baking soda, and cinnamon
- 1/4 tsp salt
- 1/2 cup raisins
- 1/4 cup chopped pecans or walnuts
- 1 cup sugar, choc chips, dates
- 2/3 cup of corn oil
- 1/2 tsp vanilla
- 2 eggs
- 1 1/2 cup fine shredded raw carrots

On wax paper sift together the flour, baking powder, baking soda, cinnamon, and salt.

On another piece of paper toss the raisins, nuts, chips, dates with 2 tbs of sifted ingredients and mix sugar and corn oil good. Beat in eggs one at a time, add sifted ingredients alternatively with carrots about one third at a time, blending just smooth after beat in eggs.

Stir into greased loaf pan and bake in at 350 for 60 to 70 mins.

Double this recipe makes three med pans.

Do not cover with foil when baking.
