Roasted New Potatoes with Garlic and Rosemary
ingredients
- 3 pounds small red potatoes, cut in half
- 1/4 cup good olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 3 large garlic cloves, thinkly sliced
- 2 teaspoons dried rosemary
- 2 tablespoons minced fresh parsley
- 2 tablespoons minced fresh chives

In large toasting pan, combine oil, salt, pepper, garlic and rosemary. Stir in potatoes until well coated.

Roast in 375 degree oven, uncovered, 1 hour or until potatoes are tender, turning them 2 or 3 times.

Remove from oven.

Before serving, toss with parsley and chives.
