Aunt Lisa's Famous Sweet Potato Souffle
Most requested dish for Thanksgiving every year. Aunt Lisa sent me this recipe when we lived in New Jersey and I have kept the card she sent it in as a keepsake.
ingredients
- 4 large sweet potatoes or 2 large cans of canned sweet potatoes. If using fresh bake and then smash.
- 1 c sugar
- 1 c milk
- 1/2 c butter melted (1 stick)
- 1 egg
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- Topping:
- 3/4 c. brown sugar
- 1/2 c flour
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 c chopped pecans
- 1 stick melted butter

Mix potatoes with sugar, milk and melted butter. Lightly beat 1 egg. Mix into the potato mixture. Stir in nutmeg and cinnamon. Pour into a buttered 2 qt casserole dish.

Mix all ingredients in topping. Sprinkle over potato mixture. Sprinkle nuts on top. Pour 1 stick melted butter on top.

Bake at 425 degrees for 45 minutes uncovered.
