Italian Pot Roast

ingredients

  • 4-6lb chuck or round roast
  • 1c dry white wine
  • 5 small cloves of garlic, crushed
  • 3 sprigs of parsley
  • 2 tsp salt
  • 1/2 tsp thyme
  • 4 Tbsp olive oil
  • 1/2 c tomatoes
  • 2 medium onions, cut in half
  • 2 bay leafs
  • 1 tsp pepper
  • 1 tsp basil

directions

Brown roast on all sides. Pour in wine, reduce heat and add rest of ingredients. Cover and simmer 4 hours
