Tangy Pork with Tomatillos and Tomatoes
Flavorful pork dish that also makes good leftovers.
ingredients
- 1 1/2 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp crushed red pepper
- 1 lb pork chops, cut into 1 in. cubes
- olive oil
- 1 cup chopped onion (vidalia or sweet onion)
- 1 glove garlic, chopped
- 2 cups tomatillos (6 small), chopped into large pieces
- 2 cups cherry tomatoes, halved
- Cilantro (optional)
- 4 cups cooked rice

Combine first 4 ingredients (cumin, chili powder, salt, red pepper) in a bowl

Add pork to bowl and toss

Heat olive oil in a skillet and add pork

Sauté 4 minutes, then remove pork

Heat more olive oil in skillet

Add garlic and onion and sauté 1 min.

Add tomatillos and sauté 1 min.

Add pork, cover, and cook 10 min.

Add tomatoes and cilantro, cover and cook 1 min.

Serve over rice
notes
Tomatillos are small, green tomatoes that are covered by a husk. They can be found in the produce section near tomatoes.
