Steamed Mussels with Garlic Herb Butter
ingredients
- 2 Tbs butter
- 5 shallots, slices
- 3 garlic cloves, sliced
- 2-3 lbs mussels, well rinsed and beards removed
- 1 plum tomato, diced
- 1-1 1/2 Cups dry white wine
- 1 tsp salt
- 1 tsp black pepper
- Garlic Herb Butter, recipe follows 1/2 c Italian parsley leaves, chopped
- 1 Stick butter, room temperature
- 3 garlic cloves, minced
- 4 Tbs minced Italian parsley leaves
- 1 Tbs minced tarragon leaves
- 2 Tbs minced basil leaves
- 1 Tbs lemon juice
- 1/2 tsp salt
- Freshly ground pepper

Mussels:
In large pot, melt the butter over medium flame, add shallots and garlic and saute for 5 minutes. Raise the heat to high and add the wine, bring to a boil and let cook down for a few minutes. Add mussels and cover. When the mussels have opened, add 1/2 the butter mixture or more to taste along with the salt and pepper.
Garlic Herb Butter:
Place all ingredients in a food processor and blend for 20 seconds until well mixed. The recipe can be doubled or tripled and frozen.
