ingredients

  • 2 Tbs butter
  • 5 shallots, slices
  • 3 garlic cloves, sliced
  • 2-3 lbs mussels, well rinsed and beards removed
  • 1 plum tomato, diced
  • 1-1 1/2 Cups dry white wine
  • 1 tsp salt
  • 1 tsp black pepper
  • Garlic Herb Butter, recipe follows 1/2 c Italian parsley leaves, chopped
Garlic Herb Butter:
  • 1 Stick butter, room temperature
  • 3 garlic cloves, minced
  • 4 Tbs minced Italian parsley leaves
  • 1 Tbs minced tarragon leaves
  • 2 Tbs minced basil leaves
  • 1 Tbs lemon juice
  • 1/2 tsp salt
  • Freshly ground pepper

directions

Mussels:

In large pot, melt the butter over medium flame, add shallots and garlic and saute for 5 minutes. Raise the heat to high and add the wine, bring to a boil and let cook down for a few minutes. Add mussels and cover. When the mussels have opened, add 1/2 the butter mixture or more to taste along with the salt and pepper.

Garlic Herb Butter:

Place all ingredients in a food processor and blend for 20 seconds until well mixed. The recipe can be doubled or tripled and frozen.
