Mom and Dad's Fried Catfish

Several years ago we started the new tradition of having a catfish fry on Christmas Eve. Now we have one almost every time Brian or I go home.

ingredients

  • farm raised catfish (Chris Efurd orders these)
  • salt
  • regular cornmeal
  • Zatarain’s Crispy Southern Style Mix
  • peanut oil
  • you need an outside deep fryer for this recipe

directions

  • 1

    Wash and pat dry fish; salt.

  • 2

    Mix cornmeal, salt and Zatarain’s mix (however much mix you are making use half cornmeal and half Zatarain’s).

  • 3

    Dip fish into mixture.

  • 4

    Fry in peanut oil at 350 degrees.

  • 5

    Place fish in a paper towel lined pan.

Serve with cheese grits & mom's sweet pickles.
