Grammy O's White Pasta Fagioli

My Gram would made this dish on a dime and always had it handy when someone stopped by to visit. A real comfort food that brings me back to my childhood.

ingredients

  • 1/2 onion diced
  • 1/2 green bell pepper diced
  • enough olive oil to cover the bottom of pot to about 1/2"
  • 2-3 cans of butter beans, garbanzo beans or cannelini beans
  • 1/2 lb cooked ditalini pasta
  • salt and pepper to taste
  • water or chicken broth in case soup is a bit too thick

directions

  • 1

    Saute the onion and bell pepper in olive oil until soft.

  • 2

    Add the butter beans and simmer for 15 or 20 minutes.

  • 3

    Add the cooked Ditalini and season with salt and pepper to taste.

  • 4

    Add a bit of water or broth if thinner consistency is desired.

  • 5

    Heat through and serve hot.
