Grammy O's White Pasta Fagioli
My Gram would made this dish on a dime and always had it handy when someone stopped by to visit. A real comfort food that brings me back to my childhood.
ingredients
- 1/2 onion diced
- 1/2 green bell pepper diced
- enough olive oil to cover the bottom of pot to about 1/2"
- 2-3 cans of butter beans, garbanzo beans or cannelini beans
- 1/2 lb cooked ditalini pasta
- salt and pepper to taste
- water or chicken broth in case soup is a bit too thick
directions

Saute the onion and bell pepper in olive oil until soft.

Add the butter beans and simmer for 15 or 20 minutes.

Add the cooked Ditalini and season with salt and pepper to taste.

Add a bit of water or broth if thinner consistency is desired.

Heat through and serve hot.
