Hearty Cheeseburger Soup
Rich meat and cheese soup
ingredients
- 1 pound ground beef or groud turkey
- 1 cup chopped onion
- 3/4 cup shredded carrots
- 3/4 cup diced celery
- 1 teaspoon dried basil
- 1 teaspoon fresh or dried parsley
- 4 tablespoons butter, divided
- 4 cups chicken broth
- 4 cups diced peeled potatoes (1-3/4 pounds)
- 1/4 cup all-purpose flour
- 2 cups mild cheddar cheese
- 1 1/2 cups milk
- 3/4 teaspoon salt
- 1/4 to 1/2 teaspoon pepper
- 1/4 cup shredded cheddar cheese
- 1/8 cup bacon bits *optional*

In a 4-qt. soup pan, brown beefthen drain off fat and set aside.

In the same pan, saute onion, carrots, celery, basil and parsley in 1 tablespoon butter until vegetables are tender, about 10 minutes. Add broth, potatoes and beef; bring to a simmer then reduce heat.

Cover and simmer for about 10-14 minutes or until potatoes are tender but not mushy.

in a seprate small saucepan, melt remaining butter. Add flour; cook and stir for 3-4 minutes or until smooth and bubbly (don’t burn)

Mix into soup; return soup to a simmer.

Stir and Reduce heat to low. Add cheese, milk, salt and pepper, stir until cheese melts.

Remove from the heat; sprinkle with shredded cheddar cheese and bacon bits
