Gazpacho
Cold tomato soup; perfect for summertime.
ingredients
- 1 46oz can of tomato juice
- 1 medium onion finely, chopped
- 2 large ripe tomatoes, chopped
- 1 green pepper finely, chopped
- 2 whole green onions, minced
- 1 clove garlic, minced
- 1/4 cup parsley
- 2 T olive oil
- 2 T lime juice
- 2 T red wine vinegar
- 1 1/2 T lemon juice
- 1 T fresh tarragon leaves (or 1 t dried)
- 1 T minced fresh basil (or 1 t dried)
- 1 t honey
- 1/2 t salt
- 1/4 t ground black pepper
- 1/4 t cumin
- Dash of tabasco
directions
Combine all ingredients in a large bowl. Put 1/2 mixture in a food processor, then return it to the mixture. Chill at least 2 hours and serve with crusty toast.
