Cold tomato soup; perfect for summertime.

ingredients

  • 1 46oz can of tomato juice
  • 1 medium onion finely, chopped
  • 2 large ripe tomatoes, chopped
  • 1 green pepper finely, chopped
  • 2 whole green onions, minced
  • 1 clove garlic, minced
  • 1/4 cup parsley
  • 2 T olive oil
  • 2 T lime juice
  • 2 T red wine vinegar
  • 1 1/2 T lemon juice
  • 1 T fresh tarragon leaves (or 1 t dried)
  • 1 T minced fresh basil (or 1 t dried)
  • 1 t honey
  • 1/2 t salt
  • 1/4 t ground black pepper
  • 1/4 t cumin
  • Dash of tabasco

directions

Combine all ingredients in a large bowl. Put 1/2 mixture in a food processor, then return it to the mixture. Chill at least 2 hours and serve with crusty toast.
