Summer Shrimp Salad
The taste of summer in a salad.
ingredients
- 1 1/2 tsp. Olive Oil
- 1 lb. Large Shrimp, peeled and deveined
- 3/4 Cup Corn Kernels
- 1/4 Cup Mayonnaise
- 1/4 Cup Pesto
- 2 T. Lemon Juice
- 1/2 Red Bell Pepper, chopped
- 3 Scallions, Chives, or Green Onions
- Salt and Pepper
- Rolls or Pasta to add to salad

In a medium skillet, heat the olive oil over medium heat. Add the shrimp and cook, stirring until done (about 3 minutes. Remove from heat; stir in the corn. Let cool.

In a medium bowl, stir together the mayo, pesto, and lemon juice. Add the shrimp mixture, bell pepper and scallions; toss. Season with salt and pepper. Stir in cooked pasta or serve on rolls.
