Carrot Cake- from Aunt Janet Young

ingredients

  • 1 cup mazolla oil (vegetable oil)
  • 1 cup white sugar
  • 3 eggs
  • 1 1/3 cup flour
  • 1 1/2 tsp baking powder and 1 1/3 tsp. baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 cups grated carrots
  • 1/2 cup nuts (optional)
  • icing:
  • 1/2 pkg. cream cheese
  • 2 tbsp butter
  • 2 cups icing sugar
  • hot water
  • 1 tsp vanilla

    Cook at 325 for 45 minutes.
