Carrot Cake- from Aunt Janet Young
ingredients
- 1 cup mazolla oil (vegetable oil)
- 1 cup white sugar
- 3 eggs
- 1 1/3 cup flour
- 1 1/2 tsp baking powder and 1 1/3 tsp. baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 cups grated carrots
- 1/2 cup nuts (optional)
- icing:
- 1/2 pkg. cream cheese
- 2 tbsp butter
- 2 cups icing sugar
- hot water
- 1 tsp vanilla
