Risotto with Variations

Start with this basic recipe, and then experiment. This is a favorite, as is asparagus and shrimp or scallops.

ingredients

  • 5 T butter
  • 1 onion, chopped finely
  • 1 c. dry white wine
  • 2 cups arborio rice
  • 1 ts salt
  • 1/4 ts white pepper
  • 1/2 ts saffron threads
  • 4-5 c. chicken broth - canned or use instant powdered with hot water
  • 3 T butter
  • 3 T parmesan cheese - fresh, plus extra cheese to pass
