Risotto with Variations
Start with this basic recipe, and then experiment. This is a favorite, as is asparagus and shrimp or scallops.
ingredients
- 5 T butter
- 1 onion, chopped finely
- 1 c. dry white wine
- 2 cups arborio rice
- 1 ts salt
- 1/4 ts white pepper
- 1/2 ts saffron threads
- 4-5 c. chicken broth - canned or use instant powdered with hot water
- 3 T butter
- 3 T parmesan cheese - fresh, plus extra cheese to pass
