Udon with Tiny Gingered Pork/Turkey Meatballs
Great hearty and healthy soup meal.
ingredients
- 1/2 lb. ground pork or turkey
- 1 tbs. minced fresh ginger root
- 1 clove garlic finely minced
- 1 tsp. finely chopped jalapeno pepper
- 1 tbs. low-sodium soy sauce
- 1 tsp. toasted sesame seeds
- 8 oz. dried Japanese buckwheat soba or udon noodles
- 10 cups lower sodium chicken broth
- 2/3 cup drained canned straw mushrooms
- 2/3 cup drained and rinsed canned baby corn
- 2 cups raw broccoli florets
- 1 cup raw asparagus
- 1/2 cup raw trimmed snow or sugar snap peas
- freshly ground pepper

Combine ground meat, ginger, garlic, jalapeno, soy sauce, and sesame seeds in a medium bowl and mix well with hands. Form into small meatballs 1 inch in diameter. Set aside.

Bring chicken broth to a boil in a large pot and add pork/turkey balls. Turn heat to low and simmer 10 minutes. Add vegetables and simmer 3 minutes more. Season with freshly ground pepper.

In another large pot, cook noodles, according to package directions, then stir into soup. Serve immediately.
