Crock Pot Chuck Roast
Courtney and her family really enjoy this recipe. It’s familiar to me as well - as one of those meals Mom put together in the crock pot before we all headed out for the day. Aunt Kathy & Uncle Dan enjoy a recipe similar to this one. If I remember the story correctly, it’s a hand-me-down recipe from Grandma Frenza. Guess that makes it a family favorite!
ingredients
- 3 lb boneless chuck roast
- 1 can Cream of Mushroom Soup
- 1 envelope Lipton’s Onion Soup Mix

Trim excess fat from the roast. In a hot pan, brown the roast on all sides.

Smother the roast on all sides with the Cream of Mushroom Soup, and sprinkle with the Onion Soup Mix.

Place the roast in the crock pot, and set on “low” for 8-10 hours, or on “high” for 4-6 hours.
VARIATION:
Add 4-5 peeled and chunked carrots, 4-5 peeled and chunked potatoes, 2-3 quartered small onions, and 3/4 C water to the bottom of the crock pot before adding the chuck roast.

Uncle Dan prefers to use Cream of Celery Soup instead of Cream of Mushroom.
